Jerk is a style of cooking native to Jamaica. Arawak Indians settled in Jamaica more than 2500 years ago. They used a technique for smoking and drying meat in the sun, and they would sometimes cook it over a slow fire. That is what makes up modern jerk cooking today. Chicken, beef, pork, fish or veggies are dry-rubbed or wet marinated with a spice mixture called Jamaican jerk spice.
